Strawberry Bruschetta

By Helen Wright, MK Gardiner-Augusta July 15, 2013
My dear friend made this for me for my birthday. We assembled the deliciousness sitting at the waterfront in Gardiner on Saturday evening.

Strawberry Bruschetta

baguette
a quart of strawberries (we had picked them but you can use store bought)
1 block cream cheese, softened
1/2 cup powder sugar, plus some for dusting
1 lemon (juiced and zested)
butter, melted
cinnamon and sugar mixed

Chop berries into small pieces, place into bowl and set aside (you don't want eat them as you are waiting for the bread to toast)

Slice the baguette into thin rounds, brush one side with butter, sprinkle with cinnamon sugar. Place slices directly on the oven rack (butter side up) and toast at 350 till lightly brown (only a few minutes)

Beat cream cheese, lemon juice, zest, and powder sugar together.

To assemble spread cream cheese mixture on toast, top with strawberries, and sprinkle powder sugar.

Enjoy!
